Nutrition Educator, Asian American Diabetes Initiative (AADI)
Ka Hei Karen Lau, MS, RD, LDN, CDCES, is a Registered Dietitian (RD) and Certified Diabetes Educator (CDE) originally from Hong Kong. Understanding the cultural differences in Asia and the United States, she creates educational materials and provides nutrition and diabetes care practices to the patients in the Asian Clinic that can be easily adapted to the culture of the patients.
Ms. Lau is passionate in helping patients and the Asian American community people to integrate healthy and enjoyable meals into their daily meal plans for better health, and for preventing and managing diabetes. She emphasizes small changes to make big differences in health. Ms. Lau encourages making one or two substitutions in classic Asian recipes prepared at home.
She is also involved in research to find better ways in helping Asian Americans in preventing and managing diabetes through day-to-day eating, exercise and even resting habits.
Ms. Lau updated the national 2019 American Diabetes Association (ADA) nutrition recommendations for people with diabetes and prediabetes.
Research Interests
Culturally-tailored intervention plans (through lifestyle modifications and improvement of clinical systems) that helps to improve the health outcomes for Asia Americans with diabetes or who are at risk for diabetes.
