Healthy and Fun Halloween Treats

Monster Apple Bites Yield: 12 servings

  • 3 granny smith apples, cored and cut into corners.
  • 1 ½ Oz Mini M&M’s
  • 1 ½ cup(s) creamy peanut butter
  • ¼ cup(s) slivered almonds

Using a paring knife, cut a wedge in the apples on the skin side. Make sure not to cut all the way through. This makes the mouth. Cut almonds into slivers for teeth. Using a spoon, fill apples with peanut butter spread. Place almond slivers along the cut edge to make teeth. Dab peanut butter on the top of the apple and stick M&M's on top to make eyes.

Nutritional Analysis: 350 Calories; 34 grams carb; 21 grams fat; 25 grams protein; 5-gram fiber

Allergy Substitution: Sun Butter and shelled sunflowers or soy nuts.

Witch’s Broomsticks Yield: 24 servings

  • 8 string cheese sticks
  • 24 pretzel sticks
  • fresh chives

Allergy Substitution: GF pretzel sticks

Cut each string cheese stick in thirds (about 1 1/2” each). Make lengthwise cuts around cheese stick to about halfway up. In the uncut end of the cheese, insert a pretzel stick. Bind with a piece of chive. Cut off extra chive.

Pumpkin Dippers Yield: 4 servings

  • 2 large carrots
  • 1 cup Hummus
  • Curly leaf parsley Paprika
  • 2-3 Scallions (stems only), cut in ¼ inch segments
  • Toothpicks

Cut carrots into ½ inch coins; pierce with a toothpick; place small parsley leaf through the toothpick as “pumpkin leaf”, place ¼ inch segment of scallion through the toothpick as the “pumpkin stem”; spread the hummus onto a flat dish and sprinkle with paprika; place carrot coin “pumpkins” in the hummus “pumpkin patch”.

Nutritional Analysis per serving: 135 Calories; 16 grams carb; 7 grams fat; 4 grams protein

Mummy Hot Dogs Yield: 8 servings

  • 1 – 8 oz. package of crescent rolls
  • 8 hot dogs
  • Mustard

Allergy Substitution: corn tortillas instead of crescent roll
Preheat oven to 350 degrees F.  Unwrap the crescent rolls to make four rectangles. Press dough at perforations to seal. Using a pizza cutter or a knife, slice the dough into thin strips, about 1/8-inch wide. Wrap crescent roll dough strips around hot dogs to make the hot dogs look like mummies, leaving room near the top for the mummy face. Bake in the oven for 14-16 minutes, until the dough, is golden brown. Just before serving, squirt a little mustard and use it to make a mummy face on the hot dogs. Serve immediately.
